Ingredients
1pound16 ounces Penne, uncooked
1-224 ounce jars spaghetti sauce
2cupscooked diced ham
1poundbacon
120 ounce can diced pineapple (or you can use 1 to 1 ½ cups freshly diced pineapple)
2cupsshredded mozzarella cheese
Instructions
Cook Penne noodles in a large pot, according to package instructions. Drain and set aside when done.
While noodles are cooking, cook bacon in a large skillet. When done place on a paper towel to drain. Save the bacon drippings in the skillet. Coarsely chop the bacon when cooled down enough to touch. Set aside.
In the same skillet as the bacon grease, place your diced ham and pineapples over medium-high heat. Cook until the ham is slightly browned and the pineapple is soft. Save 1 tablespoon of the drippings.
In a large pot, add 1 jar of spaghetti sauce, and heat over medium heat. Add 1 tablespoon of drippings and stir to combine.
Add ham, bacon, and pineapple, and stir again to combine.
Add your noodles and 1 cup mozzarella, stirring again. You may want to add more sauce from your second jar here. The sauce will absorb into the noodles a bit when baked in the oven, so you'll want your mixture to be slightly more sauce-y than you like it.
Place noodle mixture into a 9"x13" baking dish. Cover with the remaining mozzarella cheese.
Bake in a 350° oven for about 15 minutes, until cheese is melted and food is heated through.
Serve warm, with extra cheese, if desired. Pair with some fresh pineapple or a crusty bread.
