Farmer's Breakfast Skillet - diced potatoes, fresh veggies, ham, and bacon, all pan-fried to crispy golden perfection, and topped with melty cheese and eggs

Ingredients
3tablespoonsbutter
1small onionfinely chopped
1garlic cloveminced
½green or red bell pepperfinely chopped
4-6medium potatoescubed
1cupdiced ham
½poundbaconcooked and crumbled
salt & pepperto taste
a pinch of ground thyme
Instructions
Boil your potatoes in a large pot of water for 5-7. They should be firm and not-quite-done. Drain and rinse in cold water. Set aside.
Melt butter in a large skillet over medium heat. Add onion and garlic, and saute until softened, about 4 minutes.
Add the bell pepper and saute another 2 minutes.
Add the remaining ingredients, including potatoes, and mix well. Cook hash until well browned, at least 10 minutes, stirring occasionally.
In order to firm up the hash a little more, I'll place in a medium baking dish and pop it in a 250° oven while I'm cooking up the rest of the meal.
