Ingredients

  • 2 1/4 cups sugar
  • 4 teaspoons lemon zest zest from about 2 lemons
  • 3 eggs
  • 1 cup vegetable oil
  • 2 teaspoons vanilla
  • 3 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground cinnamon
  • 2 cups zucchini finely grated

Instructions

  • In a large mixing bowl, add sugar and lemon zest. Combine by rubbing the sugar and lemon zest together with your fingers. When it's combined, you should have a fluffy, fragrant sugar.
  • Add eggs, oil, and vanilla to the sugar mixture. Whisk to combine.
  • Add flour, salt, baking soda, baking powder, and cinnamon to the sugar mixture, and whisk again, until just combined.
  • Gently fold in zucchini.
  • Pour batter into two greased loaf pans.
  • Bake at 325┬░ for 40-60 minutes. Check done-ness by inserting a toothpick or fork. When it comes out clean, the zucchini bread is done.
  • If freezing, let Lemon Zucchini Bread cool completely to room temperature. Then wrap and place in freezer until ready to use.
