Ingredients
Cajun Garlic Aioli
½cupmayo
3-6dashes Louisiana-style hot sauce
1tablespoonlemon juice
¼teaspoongarlic powder
1teaspoonCajun seasoning(or more to taste)
Zucchini Fries
2large zucchini
2large eggs
½cupall purpose flour
1teaspoongarlic powder
½teaspoonblack pepper
1cupPanko bread crumbs
¼cupfinely grated Parmesan
1tablespoonfresh chopped parsley
Salt to taste
Instructions
For the Garlic Aioli
Combine all aioli ingredients in a small mixing bowl. Cover and refrigerate until ready to use.
For the Zucchini Fries
Cut ends off zucchini, then cut zucchini in half length-wise. Cut both halves in half length-wise again. Cut these strips into "frie size," about ½-inch thick and 2 inches long.
In a medium bowl, add flour, garlic powder, and black pepper. Whisk together, and set aside.
In a separate medium bowl, beat eggs. Set aside.
In a third medium mixing bowl, add bread crumbs, Parmesan, and parsley. Stir to combine.
Assembly line style, dip a zucchini strip into the flour mixture, then the eggs, and finally the breadcrumbs. Place onto a greased or line air fryer basket. Repeat until basket is full. Fries should not be touching and you may need to work in batches depending on the size of your air fryer.
Air fry at 380°F for about 8-12 minutes total, flipping at about the 8 minute mark. Serve right away with the garlic aioli.

Remember all air fryers cook at various temperatures and rates. Watch yours closely for the first batch to be sure the time and temperature will work well without burning in your air fryer.
For a plain garlic aioli, simply omit the hot sauce and Cajun seasoning. It will still make a bright and flavorful sauce without the heat.
Leave space in between each fry. If they overlap then they will not fully crisp up. This may mean you have to work in batches depending on the size of your air fryer. Turn your oven on to 200°F and place your first batches in the oven on a baking sheet while you finish cooking the remaining.
Try to cut all your zucchini the same size so that they'll cook evenly.
Zucchini fries are best when served fresh. They will become soft in texture as it cools down. I would not recommend making ahead or freezing.
