In a medium saucepan over medium heat, add milk. Heat to 105°F-110°F (use a candy thermometer or meat thermometer in a pinch). Remove from heat.
Stir sugar into warm milk.
Sprinkle yeast over top of milk and sugar mixture and allow to set until foamy, about 5 minutes.
When yeast is foamy, transfer to a large mixing bowl.
To the mixing bowl, add ¼ cup butter, egg, salt, and 2 cups flour. Beat the mixture on medium speed until smooth.
Gradually add more flour until a soft ball of dough forms. Then increase your mixer speed to medium high and beat for 2-3 additional minutes. Dough should be tacky, but not sticky. (see notes)
Lightly grease large bowl and place dough in ball, turning once to coat. Cover the bowl with clean dish towel and set in warm place to rise until doubled in size, about 45-60 minutes.
Meanwhile, prepare baking sheets by lining with a silicone mat or parchment paper. Set aside.
After the dough has risen, punch the dough down dough gently. Lightly flour work surface and turn dough out of bowl.
Roll dough out on the floured surface into an 10"x10" rectangle, about a ½-inch thick.
Cut the dough into even pieces (about 24) using a sharp knife.
Transfer rolls to prepared baking sheets. Cover with dish towels, and let rise in a warm place until doubled in size, about 60 minutes.
When dough is about 15-20 minutes to being done rising, preheat the oven to 350°F.
Uncover rolls and place in the oven for 12-15 minutes, until top and edges are golden brown.
Remove from oven and brush with melted butter. Serve warm.

Honey: Substitute ¼ cup honey instead of the sugar. Just add it at the same place in the recipe.
If the dough is too sticky, add more flour 1 tablespoon at a time.
Flour: all-purpose flour will work in this recipe, but the rolls will not be as fluffy as with bread flour.

Transfer to a freezer bag and freeze for up to 1 month. To serve, arrange rolls on a baking sheet. Thaw in the refrigerator over night. Bake to recipe instructions.
