Ingredients
2large Russet potatoes
2tablespoonsolive oil
½teaspooncoarse salt
⅛teaspoonblack pepper
Instructions
Wash and pat dry the potatoes. With a sharp knife, slice ⅛” slices down the potato, being sure not to cut all the way through.
Mix the olive oil, salt and pepper in a bowl. Brush the mixture onto the potatoes and into the slits.
Place the potatoes into the air fryer basket and cook at 350°F for 15 minutes.
Brush the potatoes again with the oil mixture and continue cooking for another 15 minutes or until cooked through and tender (longer for larger potatoes).
Remove the potatoes from the air fryer. Brush with the remaining mixture. Garnish with chives and sour cream, if desired.
