Ingredients
110.7 ounce package vanilla sandwich cookies (about 20-25 cookies)
1(8 ounce) package blueberry cream cheese
1teaspooncinnamon
2cupswhite chocolate chipsdivided
Instructions
Use a food processor to process all Oreo cookies into fine crumbs. Reserve ¼ cup crumbs and set aside.
Add cream cheese, cut into chunks, and cinnamon into the food processor with the Oreos. Process until smooth, like cookie dough.
Use a portion scoop to scoop into tablespoon size balls or roll individually by hand. Place on wax paper on a baking sheet and refrigerate for 30 minutes.
Remove from fridge and heat 1 cup of white chocolate chips in a microwave safe bowl in 30 second intervals, stirring in between each interval. These short heating spurts helps the chocolate from getting burned.
Dip balls into chocolate with a fork and coat evenly. Place onto wax paper and sprinkle with reserved crumbs.
Once that bowl of chocolate is gone, heat another bowl and cover all remaining truffles. I do this because the crumbs seem to get into the chocolate mix and make the truffles bumpy.
