Ingredients
2poundsground beef
1medium onionchopped
2packets taco seasoning
115 ounce can corn, drained
116 ounce jar salsa
1 ½cupswater
2-4cupsshredded cheese
28.5 ounce packages cornbread mix
2eggs
⅔cupsmilk
Instructions
In a large skillet, brown ground beef with onions. Drain. Return to skillet.
Add salsa, corn, taco seasoning, and water to skillet with ground beef. Stir.
Bring to a simmer while stirring. Allow to simmer for about 5-7 minutes.
Pour ground beef mixture in a 9"x13" casserole dish.
Sprinkle shredded cheese on top. Set aside.
In a medium bowl, add cornbread mix, eggs, and milk. Whisk to combine. Pour mixture over ground beef mixture.
Bake at 350° for about 40-45 minutes until cornbread is set.
