Ingredients
For the brownies
1cupbutter
16ouncesbaking chocolatecoarsely chopped
1 ½cupssugar
½cupbrown sugar
6large eggs
1teaspoonvanilla
1 ¼cupflour
¼cupcocoa powder
½teaspoonsalt
112 ounce package semi-sweet chocolate chips
For the peppermint bark topping
112 ounce package white chocolate chips
⅔cupscrushed peppermint candies or candy canes
2teaspoonsvegetable oil or shortening
Instructions
Place butter and baking chocolate in a medium microwave-safe bowl. Microwave for 30 seconds, then stir. Repeat in 30 second increments, stirring after each one, until chocolate is fully melted. Set aside to cool slightly
Line and grease a 9"x13" baking dish. Set aside.
In a large mixing bowl, add sugars and whisk together until combined.
Pour cooled chocolate mixture and vanilla. Whisk together until combined.
Add eggs, one at a time, whisking until smooth.
Fold in flour, cocoa powder, and salt, stirring until just smooth.
Gently fold in chocolate chips.
Pour batter into prepared dish.
Bake at 350 for 30-35 minutes, until cooked and a toothpick inserted comes out clean.
Allow to cool completely, still in the baking dish.
For the Peppermint White Chocolate topping
In a medium microwave-safe mixing bowl, add white chocolate chips and oil. Microwave for 30 second intervals, stirring in between each interval.
When melted, spread melted white chocolate over brownies. Then sprinkle with crushed peppermint candies.
While white chocolate is still soft, pull brownies out of baking dish by the lining and cut into squares.
Allow chocolate to set before serving (or not because who doesn't love gooey, melted chocolate?!)
