Ingredients
¼cupvegetable oil or butter
4-6chicken breasts
1teaspooncumin
1teaspoonchili powder
½teaspoonsalt
½teaspoongarlic powder
¼teaspoonblack pepper
¼teaspooncayenne pepper
115 ounce can corn, drained
116 ounce can salsa
⅓cupjarred jalapenos
1 ½cupsshredded cheesepick your favorite! Cheddar, pepper jack, or a Monterey variety will all work well
Instructions
In a large cast iron skillet, add oil and heat over medium-high heat.
While oil is heating, place cumin, chili powder, salt, garlic powder, black pepper, and cayenne pepper in a small mixing bowl. Stir to combine.
Season chicken breasts with seasoning mixture.
When oil is hot, add chicken and cook for 2 minutes on each side, until slightly browned. Remove from heat.
In a large mixing bowl, place corn, salsa, jalapenos, and cheese. Pour cheese mixture on top of chicken, still in the skillet.
Place entire skillet with chicken topped with cheese mixture in the oven. Bake at 375° for about 10-15 minutes, until chicken is cooked through and cheese is melted and gooey.
