Ingredients
½cupshortening
¾cupbrown sugar
1egg
¾teaspoonalmond extract
½teaspoonsalt
¾teaspoonbaking soda
¾teaspooncream of tartar
1 ¾cupsflour
Almond slices for topping
Instructions
In a large mixing bowl, cream together brown sugar and shortening.
Add egg and almond extract and beat again until combined.
Combine salt, baking soda, cream of tartar, and flour in a separate bowl, whisking to incorporate all ingredients.
Add the flour mixture to the shortening mixture, and mix until all ingredients are combined and the mixture resembles dough.
Chill the dough for 15-30 minutes.
Roll the dough out on a floured surface. I rolled mine out pretty thin, just a little thicker than ⅛-inch.
Cut out circles from the dough using a cookie cutter or a medium glass. My cookies are about 2 ½ inches wide. You can make yours bigger or smaller, but the baking time may vary, just a bit.
Place circle cookies onto a lightly greased baking sheet.
Place 5 almond slices in a star formation on the top of each cookie.
Bake in a 350° oven for 5-7 minutes, until the edges of the cookies start to turn golden.
