Ingredients
2 ¼cupssugar
4teaspoonslemon zestzest from about 2 lemons
3eggs
1cupvegetable oil
2teaspoonsvanilla
3cupsflour
1teaspoonsalt
1teaspoonbaking soda
1teaspoonbaking powder
1tablespoonground cinnamon
2cupszucchinifinely grated
Instructions
In a large mixing bowl, add sugar and lemon zest. Combine by rubbing the sugar and lemon zest together with your fingers. When it's combined, you should have a fluffy, fragrant sugar.
Add eggs, oil, and vanilla to the sugar mixture. Whisk to combine.
Add flour, salt, baking soda, baking powder, and cinnamon to the sugar mixture, and whisk again, until just combined.
Gently fold in zucchini.
Pour batter into two greased loaf pans.
Bake at 325° for 40-60 minutes. Check done-ness by inserting a toothpick or fork. When it comes out clean, the zucchini bread is done.
If freezing, let Lemon Zucchini Bread cool completely to room temperature. Then wrap and place in freezer until ready to use.
