This Caramel Pecan Pumpkin Trifle has all the flavors of Fall with layers of pumpkin spice pudding, sweet caramel sauce, and crunchy pecans to seal the deal.

Ingredients
1package cook-and-serve vanilla pudding
3cupsmilk
¼teaspoonnutmeg
⅛teaspoonground cloves
1teaspooncinnamon
1cuppumpkin puree
chopped pecans
Optional: Whipped cream
Caramel Sauce
1cupsugar
¼cupwater
¾cupheavy cream
4tablespoonsunsalted butter
Instructions
Pumpkin Pudding
In a medium saucepan, add pudding mix, nutmeg, cloves, and cinnamon. Stir to incorporate.
Add milk and cook according to package instructions.
When pudding has thickened, add pumpkin puree, stirring to combine. Chill in the refrigerator until ready to use.
Caramel Sauce
In a medium saucepan, combine the sugar and water over medium-low heat until the sugar dissolves.
Increase the heat and bring to a boil, without stirring. Continue boiling until the syrup is a deep amber color, about 5-6 minutes.
Remove the sugar mixture from the heat and whisk in the heavy cream (The mixture will bubble).
Stir in the unsalted butter.
Transfer to a dish and cool.
To Assemble:
In a large trifle bowl or individual bowls, layer pumpkin pudding, caramel sauce, and then pecans. Continue until you reach the top of your dish. Top with whipped cream, if desired, and drizzle with remaining caramel sauce and sprinkle with extra pecans.
