Ingredients
Whole turkeythawed if frozen, 1-1 ½ pounds per person
1cupbuttersoftened
2tablespoonschopped fresh parsley
1tablespoondried sage
¼teaspoonground thyime
1teaspoonsalt
½teaspoonblack pepper
Instructions
Preheat oven to 325°F.
In a medium bowl, whisk together butter with all spices and seasonings.
Rub half of the butter mixture underneath the skin on the breast.
Rub the remaining butter mixture on the skin.
Let the turkey stand at 30 minutes at room temperature before roasting.
Put the oven rack in the lowest position. Place the turkey breast side up on a rack in a large roasting pan.
Roast in a 325°F oven and roast until skin turns golden and a thermometer reads 160°F when inserted into the thigh, about 12-15 minutes per pound. Check the turkey about halfway through cooking, and once the skin gets golden brown, cover the top of the turkey with tinfoil, to protect the breast meat from overcooking.
Once turkey reaches 160°F, remove from the oven, tent with foil, and let it rest on the counter for at least 15 minutes or until internal temperature reaches 165°F before serving.
