For the Pumpkin Spice Cupcakes
3cupsflour
2cupssugar
1teaspoonsalt
2teaspoonsbaking powder
2teaspoonspumpkin spice
1 ½cupsvegetable oil
4eggsbeaten
2cupspumpkin puree
For the Cream Cheese Frosting
1batch of this Pipeable Cream Cheese Frosting
Optional - mix in 1 teaspoon pumpkin spice or cinnamon
Instructions
In a large bowl, whisk together flour, sugar, salt, baking powder, and pumpkin spice.
Add oil, eggs, and pumpkin puree and whisk again, just until combined
Spoon about ¼ cup batter into a lightly greased and lined cupcake pans.
Bake in a 350° oven for 30-40 minutes, or until cooked through.
Allow to cool. When cupcakes are cooled, pipe on cream cheese frosting.
