flour

brown sugar

baking powder

cinnamon

buttermilk
or use this easy buttermilk substitute
¼
cup
butter, melted
2
eggs
2
teaspoons
vanilla
1
cup
finely shredded carrots
½
cup
chopped pecans
For the frosting
Use a half batch of THIS CREAM CHEESE FROSTING recipe. If mixture is too thick for your liking
add more milk, 1 tablespoon at a time.
Instructions
In a large mixing bowl, whisk together flour, brown sugar, baking powder, cinnamon, and salt. Set aside.
In a separate mixing bowl, whisk together, buttermilk, butter, eggs, and vanilla.
Pour wet ingredients into dry ingredients, and whisk until just combined.
Fold in carrots and pecans.
Spoon mixture into a lightly greased
donut mold
. Fill about half-way.
Bake in a 350° oven for 8-10 minutes, until cooked through and a toothpick comes out clean when inserted.
Allow to cool completely.
Frost with cream cheese frosting.
Cover and store in the refrigerator.
