Instructions
Prepare the Bruschetta
In a medium mixing bowl, add tomatoes, basil, garlic, and Open Nature Balsamic Vinaigrette. Toss to combine. Cover and set aside until ready to use.
Toast the Baguette
Place baguette slices on a baking sheet. Drizzle with olive oil. Broil for about 2 minutes, until outside edges are toasted. Set aside to cool.
Prepare Creamy Bacon Spread
To a separate mixing bowl, add softened cream cheese and goat cheese. Stir until smooth. Add grated Parmesan and crumbled bacon. Fold in. Cover and refrigerate until ready to use.
Cook Bacon Wrapped Shrimp
Wrap each peeled and deveined Open Nature Shrimp in half a piece of uncooked bacon. Secure with a toothpick, necessary. Place seam side down on a baking sheet. Broil for 5-6 minutes, until shrimp is cooked through.
To Assemble:
Spread creamy bacon spread onto each baguette slice. Generously sprinkle with fresh bruschetta. Top with slightly cooled bacon wrapped shrimp. Serve immediately.
