PREHEAT & PREP

1. Heat olive oil in a large skillet over medium heat. Season chicken thighs on both sides with salt and pepper.

2. Add chicken thighs, and cook for about 3 minutes on each side, until browned. It doesn't need to be cooked through yet, just sear it. Remove chicken to a plate and set aside.

ADD& Sauté

3. To the same skillet, add shallots and garlic. Saute until tender, about 3 to 4 minutes.
