PREP THE POTATOES

1. Preheat oven to 425°F. Bake sweet potatoes for 35 minutes until almost tender. Let cool, then peel and slice into ½-inch pieces. Arrange in a 3-quart casserole dish and set oven to 375°F.

2. In a saucepan over medium heat, combine butter, sugar, and salt. Bring to a boil, stirring often, and simmer for 5 minutes. Remove from heat, add vanilla and spices if desired.
