Pumpkin Spice Cupcakes

For the Pumpkin Spice Cupcakes
- 3 cups flour
- 2 cups sugar
- 1 teaspoon salt
- 2 teaspoons baking powder
- 2 teaspoons pumpkin spice
- 1 1/2 cups vegetable oil
- 4 eggs beaten
- 2 cups pumpkin puree
For the Cream Cheese Frosting
- 1 batch of this Pipeable Cream Cheese Frosting
- Optional - mix in 1 teaspoon pumpkin spice or cinnamon
In a large bowl, whisk together flour, sugar, salt, baking powder, and pumpkin spice.
Add oil, eggs, and pumpkin puree and whisk again, just until combined
Spoon about 1/4 cup batter into a lightly greased and lined cupcake pans.
Bake in a 350° oven for 30-40 minutes, or until cooked through.
Allow to cool. When cupcakes are cooled, pipe on cream cheese frosting.
