½cupwater room temperature
1large egg

Crack egg into a small bowl. Set aside. Get out a small plate that you can use as a mug-lid.
Pour water into a microwave-safe mug or glass measuring cup.
Place in the microwave for about 6 minutes, until water reaches a low boil.
Remove from the microwave with oven mitts (it will be HOT!).
Use a spoon to stir the water in one direction so that it is in motion, like a whirlpool. Stop stirring.
While the water is in motion, gently slide the egg into the center of moving water. The swirling motion of the water will help prevent the egg white from spreading and will gently wrap the egg yolk.
Cover the mug and turn off the heat. Let poach for about 5 to 8 minutes.
Check egg doneness. (Whites should be opaque and yolk should be runny) If the whites are still clear, return the cover, and microwave for an additional 10 to 20 seconds
Using a spoon, gently lift egg out of the mug and set it on a paper towel to dry delicately.
Season with salt and pepper, then transfer to your serving plate and enjoy.

Notes
If your egg whites are separating while being cooked, add a couple drops of vinegar or lemon juice to the water.
Every microwave is different, so you may need to experiment with cook times to get it perfectly on your specific microwave at home.
If using a larger mug or cup, you may need more water. You need at least 3 inches of water in the bottom.
During my testing, classic-sized ceramic mugs worked best as far as the amount of water and insulation for cooking the egg.
