Ingredients
2large zucchinissliced about ⅛-inch thick
1large egg
2tablespoonsmilk
½cupall-purpose flour
½teaspoongarlic powder
¼teaspoonsalt
¼teaspoonblack pepper
1cuppanko bread crumbs
½cuptraditional bread crumbs
½cupgrated Parmesan
Instructions
Add the flour, garlic powder, salt, and pepper to a small, shallow bowl. Whisk to combine. Set aside.
In another bowl, combine the milk and egg and whisk until fully combined. Set aside.
In a third bowl, combine the panko bread crumbs and parmesan cheese.
Dip each zucchini slice into the flour mixture, followed by the egg mixture, and then the bread crumb mixture, pressing gently to coat.
Add the zucchini to the air fryer basket in a single layer and cook at 380°F for 8 minutes. Flip. Then air fry at 380°F for an additional 3 minutes.
Serve immediately with dipping sauce, if desired.

Reheat: Reheat in the air fryer at 380°F for about 3 minutes, or until warmed through and crispy.
Freezer Directions: Prepare zucchini chips to recipe instructions. Air fry for the first 8 minutes. Instead of flipping, transfer them to a parchment paper lined baking sheet in one even layer. Freeze for 2 hours on the baking sheet. Then transfer to a freezer bag or container, and freeze for up to 3 months. When ready to serve, place in the air fryer at 380°F for 8 minutes. If not crispy and warm all the way through, air fry for an additional 3 to 5 minutes.
