Festive Eggnog Fudge combines the creamy, spiced flavors of traditional eggnog with the smooth, melt-in-your-mouth texture of fudge. This holiday treat is perfect for parties, gifting, or simply indulging in a festive dessert.
Line an 8 or 9-inch square pan with parchment paper. Set aside.
In a medium heavy bottom saucepan, combine butter, eggnog, and sugar. Heat over medium heat.
Bring mixture to a rolling boil, stirring constantly. Continue boiling about 7 minutes, until a candy thermometer reaches 234°F, stirring to prevent scorching. Remove from heat.
Working quickly, add white chocolate chips, marshmallow creme, rum extract, and nutmeg. Stir until melted and smooth.
Pour into prepared pan and smooth. Sprinkle on more nutmeg for garnish, if desired.
Let stand at room temperature until cooled and set.
When completely cool, cut into squares. Store in a covered container in the refrigerator.

Freezer Directions: Tightly wrap cooled fudge in parchment paper, then foil. You can freeze the full sheet of fudge or in individual pieces. If freezing them in individual pieces, place in a labeled freezer bag to freeze. Freeze for up to 2 months. Thaw overnight in the refrigerator before using to thaw slowly and prevent condensation. Bring to room temperature before serving.
