1mediumacorn squash
1tablespoon olive oil
Salt and pepper to tasteif desired
Instructions
Cut the squash in half vertically. Use a large spoon to scoop out the seeds and discard them.
Prick all over the insides of the squash halves with a fork.
Place squash halves, cut sides-up, into a large, microwave-safe dish.
Brush with olive oil and season with salt and pepper if desired.
Microwave on high power until flesh pierces easily with a fork, about 10 to 15 minutes. Season with salt and pepper.
