Ingredients
1package(14 ounces) mint Oreo cookies
8ouncescream cheesesoftened
2packages(4.67 ounces each) Andes Creme de Menthe Thins
4ouncessemi-sweet chocolate
1teaspooncooking oil
6ounceswhite chocolateOPTIONAL for decorating and drizzling (or other favorite chocolate)
Green Food coloringoptional
Instructions
Prepare the Truffles
Line a baking sheet with wax paper. Set aside.
Place the Oreos in a food processor and blend until they form fine crumbs
Add the cream cheese and process again to form a sticky dough.
Roll into 1-inch balls, and set aside onto prepared baking sheet. Freeze for 30 minutes.
Dip in Chocolate
Place the Andes chocolate and semi-sweet chocolate in a medium microwave-safe bowl with vegetable oil. Microwave for 45 seconds. Stir. Then microwave in 30-second intervals, stirring after each increments, until chocolate is melted and smooth.
Remove Oreo balls from the freezer. Gently drop them into the melted chocolate, one at a time, turning to coat. Lift the truffle out of the chocolate with a fork and slide the bottom of the fork along the top of the bowl to allow excess chocolate to drip off. Then set it on the wax paper.
Repeat for remaining truffles.
Once all truffles have been coated, refrigerate for at least 10 minutes to set.
Decorate
Place white chocolate in a small microwave bowl. Microwave for 45 seconds. Stir. Then microwave in 30-second intervals, stirring after each increment, until chocolate is melted and smooth.
Add green food coloring, if desired, and stir to combine. Add more until you reach desired color.
Transfer white chocolate to a plastic baggy or piping bag.
Cut a small corner off the baggy, and drizzle over set truffles.
Chill or allow to sit at room temperature until set and firm, about 30 minutes longer.

Chocolate: You can use any type of chocolate including white, milk, semi-sweet, or dark.
Storage: Store covered in the refrigerator for up to a week.
Make Ahead: The shaped balls can be chilled in the refrigerator for up to 3 days before coating with chocolate.
Freezer: You can freeze uncoated or finished Oreo truffles for up to 2 to 3 months. Thaw overnight in the refrigerator.
