Ingredients
1tablespoonolive oil
1medium bell pepper diced
1cupsliced mushrooms
1medium oniondiced
12large eggs
¾cuppizza sauce
2teaspoonsgarlic powder
2teaspoonsItalian seasoning
¼teaspoonsalt
¼teaspoonblack pepper
2ouncespepperonidivided (coarsely chop half, about 1 ounce)
4ouncesfreshly shredded mozzarella cheesedivided
Fresh basil, grated Parmesan, and red pepper flakesfor topping
Instructions
Preheat the oven to 350°F.
Heat olive oil in a large oven-safe skillet over medium heat.
Add pepper, mushrooms, and onion, and saute until tender.
While vegetables are cooking, add eggs, pizza sauce, garlic powder, Italian seasoning, salt, and pepper to a large mixing bowl. Whisk to combine.
Add the chopped half of the pepperoni and half of the cheese, and stir to combine.
Reduce heat to medium-low. Add egg mixture to the pan with vegetables. Allow to cook for 2 to 3 minutes until bottom and sides start to set.
Bake at 350°F for 15 minutes.
Top with remaining cheese and pepperoni.
Bake for an additional 5-7 minutes until eggs are firm and cooked through.
Let cool for about 5 minutes. Top with toppings such as basil, parmesan, or red pepper flakes.
