Ingredients
2 ¼cupspancake or baking mix
1cupmilk
1egg
⅓cupchopped chives
6slicesAmerican Cheese
18slicesdeli cut ham
12tablespoonscream cheese, softened for spreading
Instructions
In a large mixing bowl, whisk together baking mix, milk, and egg until combined.
Fold in chives.
Pour about ¼ cup of the mixture onto a hot griddle or skillet, and cook until edges are lightly browned and bubbles start forming on the surface. Flip, then continue cooking until golden and cooked through.
Repeat for remaining batter.
To assemble sandwiches, spread cream cheese onto a pancake. Place ham then cheese on top. Top with an additional pancake. To melt cheese, add sandwich back to griddle and cover to steam or heat in the microwave for 20-30 seconds.
