Chive Ham and Cheese Pancake Sandwiches
Easy breakfast recipe coming your way! What I like most about this Chive Ham and Cheese Pancake Sandwiches recipe is that it's different from the norm. Totally packed with protein instead of your usual sugary syrups. Plus it's freezer friendly, so you can make them, then freeze what you don't need that day.
To use after freezing, simply take them out of the freezer to thaw the night before (or you can defrost in the microwave). Then you can warm it up in a skillet for a few minutes. Voila! Super simple breakfast that's even great on the go!
Chive Ham and Cheese Pancake Sandwiches Recipe

Chive Ham and Cheese Pancake Sandwiches
Ingredients
- 2 ¼ cups pancake or baking mix
- 1 cup milk
- 1 egg
- ⅓ cup chopped chives
- 6 slices American Cheese
- 18 slices deli cut ham
- 12 tablespoons cream cheese, softened for spreading
Instructions
- In a large mixing bowl, whisk together baking mix, milk, and egg until combined.
- Fold in chives.
- Pour about ¼ cup of the mixture onto a hot griddle or skillet, and cook until edges are lightly browned and bubbles start forming on the surface. Flip, then continue cooking until golden and cooked through.
- Repeat for remaining batter.
- To assemble sandwiches, spread cream cheese onto a pancake. Place ham then cheese on top. Top with an additional pancake. To melt cheese, add sandwich back to griddle and cover to steam or heat in the microwave for 20-30 seconds.
