2½poundsstew beef(beef chuck cut into bite-sized pieces)
½cupflour
¾teaspoonsalt
¾teaspoonblack pepper
1tablespoon olive oil
1large yellow onion diced
4garlic clovesminced
3large carrotscut into ½-inch slices
3celery ribssliced into ½-inch disks
4medium gold potatoesdiced
32ouncesbeef stock
12ouncesGuinness beer
3tablespoonstomato paste
2medium bay leaves
4sprigs fresh thymedestemmed
Salt and black pepper
Instructions
In a large bowl, add beef, flour, salt, and pepper. Toss to coat. Add to the slow cooker.
In a large skillet, heat olive oil over medium heat.
Add onions and saute until tender.
Add garlic and continue sauteing until fragrant, about 2 more minutes.
Add onion mixture to the slow cooker with beef.
Add remaining ingredients to the slow cooker. Stir to combine.
Cover and cook on LOW for 6-8 hours, or HIGH for 4-5 hours, or until your potatoes are soft and the broth has thickened.
Remove bay leaves before serving. Add salt and pepper to taste. Serve warm.
