Ingredients
2 to 3 bunches curly parsleyfinely chopped (about 3 cups)
1cupdiced English cucumber
1cupchopped Roma tomato(about 3 medium tomatoes)
⅓cupmint leavesfinely chopped
4green onionsfinely sliced
¼cupfinely chopped dilloptional
½cupdry fine bulgur wheat
Dressing
½cup extra virgin olive oil
¼cupfresh lemon juice
1tablespoonlemon zest
1garlic cloveminced or pressed
½teaspoonsea salt`
¼teaspooncumin
¼teaspooncinnamon
¼teaspoonallspice
¼teaspoonground coriander
⅛teaspoonground nutmeg
⅛teaspoonground cloves
⅛teaspooncardamom
Instructions
In a large bowl, add parsley, cucumber, tomato, mint, green onion, and dill. Toss to combine.
In a separate medium mixing bowl or jar, add all dressing ingredients and spices. Whisk (or shake if using a jar) to combine.
Add dressing and bulgur to the herb mixture and gently stir or toss to combine.
Cover and store in the refrigerator for 1 to 3 hours before serving to allow the flavors to meld.
Before serving, stir and add additional lemon juice and salt to taste.
