Caprese Bites
A fresh and simple appetizer or snack, these Caprese Bites are easy to make and delicious to eat! Great way to use up fresh Summer produce.

Ingredients
Fresh mozzarella
Heirloom cherry tomatoes
Fresh basil
1 ½
tablespoons
extra virgin olive oil
1 ½
tablespoons
balsamic vinegar
1
clove
minced garlic
salt & pepper to taste

Instructions
Slice the heirloom cherry tomatoes and set aside.
Next, slice the fresh mozzarella into ¼" slices and then cut into quarters.
Finally, pluck the fresh basil leaves from the stem.
In no particular order, skewer the basil leaves, heirloom tomato slices and fresh mozzarella cheese. I like to mix it up and even the kids did a few.
In a small mixing bowl, whisk together the olive oil, vinegar, and garlic until combined.
Drizzle over the appetizers.
Sprinkle with salt & pepper to taste.
