Caprese Bites
Anyone getting ready for garden overload this Summer?! I'm excited! I mean, yeah, I'm just finally this weekend supposed to be technically planting the garden... And yeah, I might be counting my chickens before they hatch (Side note. I also REALLY wish we could have chickens at our house. Fresh eggs! Yum!). But I'm still excited.
During the summer, my kids will pick the tomatoes out of the garden, wash them off with the hose, and just eat them right there outside. ย Love it. ย But if you happen to have lots and lots like we usually do (and if you don't get a good crop then hurry up and check out these tips to get a better one!), then bring some inside to make these fresh, yummy Caprese Bites.
These Caprese Bites make great, simple snacks for both kids AND grown-ups. ย Though, if I'm making it especially for the kids, I dial down the garlic as much as possible because they insist garlic is "spicy." (Ugh. Crazy kids.) For me, I might add a couple extra cloves because I really love garlic. ย These Caprese Bites also make lovely appetizers. ย Of course, they're the best in the Summer when you can grab those fresh tomatoes right out of the garden, but you can always grab some good ones from the grocery store year-round or if you don't have a garden.
To make these Caprese bites, slice the cherry tomatoes in half.ย Cut the mozzarella into slices, then cut each slice into quarters. ย Slide a piece of tomato, mozzarella, and a basil leaf onto a toothpick, and repeat until you've used up your ingredients. ย You can leave these as is, or add the tangy balsamic sauce. ย To make the sauce just add olive oil, balsamic vinegar, mince garlic, and salt and pepper to taste in a medium bowl. Stir to combine. Then drizzle over the caprese bites, or you could even serve it on the side.
You can make your caprese bites and the balsamic sauce ahead. Just don't put the sauce on the bites until right before serving or it could end up soggy.

Caprese Bites
Ingredients
- Fresh mozzarella
- Heirloom cherry tomatoes
- Fresh basil
- 1 ยฝ tablespoons extra virgin olive oil
- 1 ยฝ tablespoons balsamic vinegar
- 1 clove minced garlic
- salt & pepper to taste
- toothpicks
Instructions
- Slice the heirloom cherry tomatoes and set aside.
- Next, slice the fresh mozzarella into ยผ" slices and then cut into quarters.
- Finally, pluck the fresh basil leaves from the stem.
- In no particular order, skewer the basil leaves, heirloom tomato slices and fresh mozzarella cheese. I like to mix it up and even the kids did a few.
- In a small mixing bowl, whisk together the olive oil, vinegar, and garlic until combined.
- Drizzle over the appetizers.
- Sprinkle with salt & pepper to taste.
