  • 3 tablespoons butter
  • 1 small onion finely chopped
  • 1 garlic clove minced
  • 1/2 green or red bell pepper finely chopped
  • 4-6 medium potatoes cubed
  • 1 cup diced ham
  • 1/2 pound bacon cooked and crumbled
  • salt & pepper to taste
  • a pinch of ground thyme


  • Boil your potatoes in a large pot of water for 5-7. They should be firm and not-quite-done. Drain and rinse in cold water. Set aside.
  • Melt butter in a large skillet over medium heat. Add onion and garlic, and saute until softened, about 4 minutes.
  • Add the bell pepper and saute another 2 minutes.
  • Add the remaining ingredients, including potatoes, and mix well. Cook hash until well browned, at least 10 minutes, stirring occasionally.
  • In order to firm up the hash a little more, I'll place in a medium baking dish and pop it in a 250┬░ oven while I'm cooking up the rest of the meal.
  • Serve warm. Top with cheese and eggs, if desired.
