Farmer's Breakfast Skillet

This Farmer's Breakfast Skillet recipe is my go-to on brinner nights.  It's delicious and hearty, with potatoes, ham, bacon, and veggies, all pan-fried to perfection, then topped with melty cheese and eggs.   Its awesome for breakfast skillets or as a side dish to your morning eggs.

You can mix up your own Farmer's Breakfast Skillet by adding your favorite vegetables, or using whatever leftover meat you have from the week.  We use ham often, because we always have leftovers after a big ham dinner.  But we've also used corned beef, and that was equally as yummy.

Ingredients

  • 3 tablespoons butter
  • 1 small onion finely chopped
  • 1 garlic clove minced
  • ½ green or red bell pepper finely chopped
  • 4-6 medium potatoes cubed
  • 1 cup diced ham
  • ½ pound bacon cooked and crumbled
  • salt & pepper to taste
  • a pinch of ground thyme

Instructions

  • Boil your potatoes in a large pot of water for 5-7. They should be firm and not-quite-done. Drain and rinse in cold water. Set aside.
  • Melt butter in a large skillet over medium heat. Add onion and garlic, and saute until softened, about 4 minutes.
  • Add the bell pepper and saute another 2 minutes.
  • Add the remaining ingredients, including potatoes, and mix well. Cook hash until well browned, at least 10 minutes, stirring occasionally.
  • In order to firm up the hash a little more, I'll place in a medium baking dish and pop it in a 250° oven while I'm cooking up the rest of the meal.
  • Serve warm. Top with cheese and eggs, if desired.

    I love hash!! Doesn't even matter what's in there as long as there is a meat, some taters and an egg or two 🙂 On the other hand, hubby can't stand to have his food touch each other.....so I don't often get a hash but this is a yummylicious recipe!
