Ingredients
18 ounce package cream cheese, softened
1cupsour cream
114 ounce can diced tomatoes and green chiles
1teaspoonchili powder
1teaspooncumin
½medium onion chopped
⅓cupfreshly chopped cilantro
8ouncesabout 2 cups shredded cheddar
8ouncesabout 2 cups shredded Monterey cheese
8ouncesabout 2 cups shredded mozzarella
1-210 ounce cans red enchilada sauce
10-12flour tortillas
Instructions
In a large mixing bowl, beat together cream cheese, sour cream, and tomatoes and green chiles until smooth.
Grab about a handful (½ cup) of each cheese and set aside. Then add chili powder, cumin, onion, cilantro, and the remaining cheese to the bowl and stir to incorporate.
Scoop about ¼ of the enchilada filling mixture into a tortilla. Then roll it up, and place in a greased 9"x13" baking dish. Repeat for remaining ingredients.
Cover rolled enchiladas with enchilada sauce. Then sprinkle with remaining cheese.
Bake in a 350° oven for 15-25 min, or until heated through.
