Ingredients
6Angus Beef BUBBA burgers
½red onionthinly sliced
6 brioche buns
8ouncescrumbled Feta cheese
1½cupsarugula
For the Blueberry Sauce
1pintfresh or frozen blueberries
¼cupsugar
3tablespoonslemon juice
1tablespooncornstarch
¼cupwater
For the Jalapeno Aioli
1-2fresh jalapenosseeded and coarsely chopped
¼cupfresh basil leaves
¼cupolive oil
2tablespoonslemon juice
½teaspoongarlic powder
¼cupmayo
Salt to taste
Instructions
In a large bowl of water, soak onion slices. Set aside.
For the Blueberry Sauce
In a medium sauce pan, add blueberries, sugar, lemon juice, and a pinch of salt. Bring to a boil over high heat.
Once mixture is boiling, in a separate small mixing bowl, combine cornstarch and water. Drizzle into blueberry mixture until sauce thickens to the consistency of pancake syrup. Then remove from heat and set aside to cool.
For the Jalapeno Aioli
Combine all ingredients except mayo and salt in a food processor or blender. Process until smooth. Stir in mayo to thicken, as needed. Add salt to taste.
For the Burgers
Preheat grill to medium heat.
Place burgers on the grill. Cook for about 5 minutes, until juices rise to the top of the burger. Flip burger, and finish cooking, until internal temperature reaches 160°F.
To Assemble
Place a BUBBA burger on the bottom half of a bun. Top with blueberry sauce, sprinkle with feta, place a couple onion slices on top (patted dry), and add a little arugula. Smear jalapeno aioli on the top bun before placing on top.
