Spicy Blueberry Burgers
One of my favorite parts of summer is when our local blueberry farm announces that their blueberries are ripe and ready to pick. And of course, one of everyone's favorite summer past times is grilling up some burgers with friends and family. I'm excited to partner with BUBBA burger to share this super fresh and fun combination of those two things in these Spicy Blueberry Burgers.
Normally, when you think blueberries, you probably think sweets like muffins and pies and cakes. But they're equally delicious when they're used in a savory dish.
These Spicy Blueberry Burgers feature 100% chuck beef BUBBA burgers, grilled to perfection, and topped with a slightly sweet blueberry sauce, quick spicy jalapeno aioli, creamy and salty feta crumbles, and some red onion for tang and crunch.
What's in a Spicy Blueberry Burger?
Burger: BUBBA burgers keep this recipe super quick and simple. I recommend using their Original or Angus Beef for this recipe, both of which are gluten free, additive free, and 100% chuck beef. There's no prep work for you because they can cook from frozen on the grill (or in a skillet if you're cooking indoors today!) in just 10 minutes.
Blueberry Sauce: A simple, slightly sweet sauce made with lots of blueberries, and a little sugar, water, and lemon juice. This should simmer down quickly in a saucepan and be the consistency of a thick syrup or thin jam. You can use fresh or frozen blueberries for this sauce.
Jalapeno Aioli: This is a quick blender sauce that adds the spice to these burgers. You just toss all of the ingredients into a food processor or blender and blend until smooth. Then you can fold in some mayo for some extra creaminess and to thicken it back up a little. Depending on your level of spice tolerance, you can add more jalapenos if desired, or leave in the seeds for a very (and I mean VERY VERY) spicy sauce. Always taste test your jalapenos before adding more, as their spice level can vary quite a bit.
Bun: I used brioche buns for this recipe to amplify the sweetness of the blueberry sauce a bit, but you can use plain buns, pretzel buns, or any other bun your heart desires.
Toppings: The remaining toppings for this burger are feta crumbles for saltiness and creaminess. You can also use goat cheese for the same effect. Red onions add some crunch and tang. And arugula adds some freshness.
Why Soak the Onions?
Basically, it makes the onions less pungent and more mellow. When you put the onions in water the sulfur compounds that give onion its pungent harsh flavor dissipate in the water, resulting in a milder version. The onion will still retain its characteristic flavor, just with less bite.

Spicy Blueberry Burgers
Ingredients
- 6 Angus Beef BUBBA burgers
- ยฝ red onion thinly sliced
- 6 brioche buns
- 8 ounces crumbled Feta cheese
- 1ยฝ cups arugula
For the Blueberry Sauce
- 1 pint fresh or frozen blueberries
- ยผ cup sugar
- 3 tablespoons lemon juice
- 1 tablespoon cornstarch
- ยผ cup water
For the Jalapeno Aioli
- 1-2 fresh jalapenos seeded and coarsely chopped
- ยผ cup fresh basil leaves
- ยผ cup olive oil
- 2 tablespoons lemon juice
- ยฝ teaspoon garlic powder
- ยผ cup mayo
- Salt to taste
Instructions
- In a large bowl of water, soak onion slices. Set aside.
For the Blueberry Sauce
- In a medium sauce pan, add blueberries, sugar, lemon juice, and a pinch of salt. Bring to a boil over high heat.
- Once mixture is boiling, in a separate small mixing bowl, combine cornstarch and water. Drizzle into blueberry mixture until sauce thickens to the consistency of pancake syrup. Then remove from heat and set aside to cool.
For the Jalapeno Aioli
- Combine all ingredients except mayo and salt in a food processor or blender. Process until smooth. Stir in mayo to thicken, as needed. Add salt to taste.
For the Burgers
- Preheat grill to medium heat.
- Place burgers on the grill. Cook for about 5 minutes, until juices rise to the top of the burger. Flip burger, and finish cooking, until internal temperature reaches 160ยฐF.
To Assemble
- Place a BUBBA burger on the bottom half of a bun. Top with blueberry sauce, sprinkle with feta, place a couple onion slices on top (patted dry), and add a little arugula. Smear jalapeno aioli on the top bun before placing on top.
