Ingredients
1tablespoonolive oil
1poundkielbasa sausagehalved length-wise and sliced
1red bell pepperchopped
1medium onion chopped
2large carrotsshredded
6garlic clovesminced
2teaspoonsItalian seasoning
2cupschicken broth
1can(15 ounces) fire roasted tomatoes
½cupmilk
Salt and black pepperto taste
8ouncesuncooked penne
15ouncesricotta cheese
2cupsshredded Colby Jack cheese
Instructions
Preheat oven to 350°F.
Add olive oil to a large oven-safe skillet over medium heat.
Add the kielbasa, red pepper, onion, and carrots, and cook, stirring regularly until veggies are tender and sausage is slightly browned.
Stir in the garlic and Italian seasoning, and cook until fragrant.
Add chicken broth, tomatoes, milk, pasta, and salt and black pepper.
Bring to a boil. Once at a boil, lower the heat to medium-low. Cover and cook for 15 minutes, or until the pasta is al dente, stirring occasionally. Remove from heat. Season with additional salt and pepper to taste.
Add the ricotta in dollops on top cheese. Sprinkle with shredded cheese.
Bake uncovered at 350°F for 15 minutes, until cheese is melted. Serve warm.
Storage: Store leftovers up to 5 days in the refrigerator. Reheat in individual servings in the microwave.
Freezer Instructions: Stop before adding the cheese to the top of the pasta. Allow pasta to cool to room temperature. Cover and freeze for up to 3 to 6 months. Thaw in the refrigerator before warming on the stove (or oven) and topping with cheese.
