Cheesy Kielbasa Pasta Bake
Ingredients
- 1 tablespoon olive oil
- 1 pound kielbasa sausage halved length-wise and sliced
- 1 red bell pepper chopped
- 1 medium onion chopped
- 2 large carrots shredded
- 6 garlic cloves minced
- 2 teaspoons Italian seasoning
- 2 cups chicken broth
- 1 can (15 ounces) fire roasted tomatoes
- ½ cup milk
- Salt and black pepper to taste
- 8 ounces uncooked penne
- 15 ounces ricotta cheese
- 2 cups shredded Colby Jack cheese
Instructions
- Preheat oven to 350°F.
- Add olive oil to a large oven-safe skillet over medium heat.
- Add the kielbasa, red pepper, onion, and carrots, and cook, stirring regularly until veggies are tender and sausage is slightly browned.
- Stir in the garlic and Italian seasoning, and cook until fragrant.
- Add chicken broth, tomatoes, milk, pasta, and salt and black pepper.
- Bring to a boil. Once at a boil, lower the heat to medium-low. Cover and cook for 15 minutes, or until the pasta is al dente, stirring occasionally. Remove from heat. Season with additional salt and pepper to taste.
- Add the ricotta in dollops on top cheese. Sprinkle with shredded cheese.
- Bake uncovered at 350°F for 15 minutes, until cheese is melted. Serve warm.

- For this recipe, I use a 12-inch cast iron skillet, and it fits pretty perfectly.
- Storage: Store leftovers up to 5 days in the refrigerator. Reheat in individual servings in the microwave.
- Freezer Instructions: Stop before adding the cheese to the top of the pasta. Allow pasta to cool to room temperature. Cover and freeze for up to 3 to 6 months. Thaw in the refrigerator before warming on the stove (or oven) and topping with cheese.
