Ingredients
1pounddried split peas
2tablespoonsolive oil
2large onionsdiced
3garlic cloves
1cupdiced carrotsabout 2 to 3 large
1cupdiced celeryabout 2 to 3 ribs
1large russet potatopeeled and diced
1½cupsdiced ham
1ham bone or ham hock
2teaspoonsfresh thyme
4cupschicken stock
4 cupswater
2bay leaves
Salt and pepper to taste
Croutons and fresh thymefor serving
Instructions
Dump split peas into a large bowl. Cover with hot water. Set aside.
In a large skillet over medium heat, add olive oil. Add onion, and cook until tender and translucent, about 5 minutes.
Add garlic, and cook for an additional 2 minutes, until fragrant.
Drain split peas and add to slow cooker with all remaining ingredients, including cooked onion and garlic. Stir to combine.
Cover and cook on Low for 8 hours or high for 4 to 5 hours.
When ready to serve, remove ham bone and bay leaves. Season with salt and pepper to taste. Serve hot with croutons and fresh thyme.

Storage: Leftovers taste even better the next day! Store leftovers covered in the refrigerator for up to 5 days. Reheat in individual portions in the microwave or larger portions on the stovetop.
Freezer Directions: Prepare and cook soup. Allow to cool to room temperature. Transfer to a freezer dish or bag. Cover tightly and freeze for up to 3 months. Thaw overnight in the refrigerator before reheating in a large pot on the stovetop.
