Ingredients
1poundbreakfast sausage
12 to 16hearty bread slices
12eggs
2½cupsmilk
1teaspoonprepared yellow mustard
1teaspoonsalt
½teaspoonblack pepper
1 ½cupsshredded cheddardivided
2tablespoonssliced green onions or fresh chivesfor garnish
Instructions
In a medium skillet over medium heat, brown sausage. Continue cooking until cooked through until no longer pink. Drain and set aside.
In a lightly greased 9"x13" baking dish, place slices of bread in 2 to 3 layers. You can rip bread to help it fit better, if necessary.
Pour slightly cooled sausage on top of bread layers, and spread evenly. Set aside.
In a large bowl, add all eggs. Lightly whisk eggs.
Add milk, mustard, salt, and pepper and continue beating until fully combined.
Add 1 cup cheese to the egg mixture. Stir to combine.
Pour egg mixture on top of bread layers. Top with remaining cheese.
Bake in a 350°F oven for about 45 minutes or until cooked through.
Top with sliced green onions or fresh chives before serving.

Make Ahead: Assemble the casserole, cover and refrigerate up to 24 hours in advance. Bake for an additional 10 minutes to account for the cold dish and casserole.
Storage: Store leftovers covered in the refrigerator for up to 5 days. Reheat in individual servings in the microwave.
Freezer Directions: Prepare casserole through step 7. Then cover tightly and freeze for up to 3 months. Thaw overnight in the refrigerator. Bake for an additional 10 to 15 minutes, or until completely cooked through, to account for the cold dish and casserole.
