Ingredients
1tablespoonolive oil
1medium yellow onionchopped
3garlic clovesminced
6cupschicken broth
1pounddried black eyed peas
½cuphamcooked and cubed or chopped
1teaspoonsalt
Instructions
Turn the Instant Pot to saute, and heat olive oil.
When hot, add onions and garlic, and saute until the onion is tender and translucent. Turn off Instant Pot.
Add remaining ingredients to Instant Pot. Stir to combine.
Place the lid on and set to seal. Cook for 30 minutes on Manual High Pressure.
When finished cooking, allow a natural release for 10 minutes. Then open the vent to finish the rest of the release.
Add salt and pepper to taste, if needed. Serve with a slotted spoon.

Storage: Store in an airtight container for up to 5 days. Reheat on a stovetop in a pot over medium heat or in a microwave safe bowl for a few seconds until heated through.
Freezer Directions: Allow black-eyed peas to cool completely to room temperature. Transfer to a freezer container, and freeze for up to 3 months. Thaw overnight in the refrigerator to use.
