Ingredients
2cupsheavy cream
¾cupgranulated sugar
Zest from 1 lemon
⅓cupfreshly squeezed lemon juice
Berries and mint leavesfor serving (optional)
Instructions
In a medium saucepan over medium high heat, bring cream and sugar to a boil, stirring constantly until sugar dissolves.
Reduce heat to medium, and continue boiling for 3 minutes, stirring constantly, adjusting heat as necessary to keep it from boiling over. Remove from heat.
Stir in lemon zest and juice.
Allow to sit 10 minutes to cool.
Stir the mixture again. Then divide between 6 individual bowls or ramekins. Cover each with plastic wrap, and chill until set, about 3 hours or overnight.
Garnish with fresh berries or mint leaves before serving if desired.
