Ingredients
- 2 cups heavy cream
- ยพ cup granulated sugar
- Zest from 1 lemon
- โ cup freshly squeezed lemon juice
- Berries and mint leaves for serving (optional)
Instructions
- In a medium saucepan over medium high heat, bring cream and sugar to a boil, stirring constantly until sugar dissolves.
- Reduce heat to medium, and continue boiling for 3 minutes, stirring constantly, adjusting heat as necessary to keep it from boiling over. Remove from heat.
- Stir in lemon zest and juice.
- Allow to sit 10 minutes to cool.
- Stir the mixture again. Then divide between 6 individual bowls or ramekins. Cover each with plastic wrap, and chill until set, about 3 hours or overnight.
