Happy April Fools Day! But this Lemon Butter recipe I'm going to share today is no joke! Sweet, zesty, lemon is basically the mascot for Spring, right? There's something so hopeful and cheery about it after a long cold winter.
This sweet, tangy Lemon Butter is perfect to make for a shower or party, or even a gift! You can easily double this recipe if you need a larger batch for a party. Also, it's just nice to have in the fridge as a yummy reminder that Spring is here! Treat yourself with a yummy, cheery lemon butter snack on your favorite bread, biscuit, or roll (or scone... or cookie...)
To make this easy Lemon Butter recipe, you start by creaming together softened butter and a little powdered sugar, just like you do at the beginning of nearly every cookie recipe. Then you'll add the remaining ingredients and beat again until smooth. And that's it! Store covered in the refrigerator. You can either place it in a storage container with a lid, or wrap it up in plastic wrap or wax paper.

Ingredients
- ½ cup 1 stick butter, softened
- ¼ cup powdered sugar
- 2 tablespoons lemon curd
- 1 teaspoon lemon zest
- Juice from 1 lemon
Instructions
- In a large mixing bowl, place butter and powdered sugar and beat until smooth.
- Add remaining ingredients to bowl and beat again until smooth.
- Cover and refrigerate to store.
