Ingredients
½tablespoonolive oil
8ouncessliced white mushrooms
3 to 4boneless skinless chicken breastcut in half length-wise
salt & pepper
1can(10 ounces) cream of mushroom soup
½cuphalf and half
1teaspoonground paprika
2teaspoonsdried parsley
Instructions
Preheat oven to 350°F.
Place chicken breasts in a 9"x13" baking dish. Season with salt and pepper. Set aside
In a medium skillet, heat oil. Add mushrooms and saute until tender. Remove mushrooms from heat.
Add cream of mushroom soup and half-and-half, and whisk to combine.
Pour over seasoned chicken breasts, making sure to fully coat each breast.
Season with paprika and parsley.
Bake in a 350°F oven for about 40 to 45 minutes, until chicken is cooked through.

Storage: Store leftovers in an airtight container in the refrigerator for up to 4 to 5 days. Reheat in the microwave.
Freezer Directions: Prepare recipe but do not bake. Cover and freeze for up to 3 months. Thaw in the refrigerator overnight. Bake as instructed, adding an additional 10 minutes to account for the cold dish.
