Freezer Instructions
Baked Mushroom Chicken can be prepared ahead of time and frozen for a busy night or to give to a new mom or friend in need.
Prepare the full recipe but stop before baking. Then cover and freeze for up to 3 months.
When ready to cook, thaw the dish completely, by placing in the refrigerator for 24-48 hours.
Add an additional 10 minutes onto the baking time to account for the cold dish.

Mushroom Chicken Bake
Ingredients
- ½ tablespoon olive oil
- 8 ounces sliced white mushrooms
- 3 to 4 boneless skinless chicken breast cut in half length-wise
- salt & pepper
- 1 can (10 ounces) cream of mushroom soup
- ½ cup half and half
- 1 teaspoon ground paprika
- 2 teaspoons dried parsley
Instructions
- Preheat oven to 350°F.
- Place chicken breasts in a 9"x13" baking dish. Season with salt and pepper. Set aside
- In a medium skillet, heat oil. Add mushrooms and saute until tender. Remove mushrooms from heat.
- Add cream of mushroom soup and half-and-half, and whisk to combine.
- Pour over seasoned chicken breasts, making sure to fully coat each breast.
- Season with paprika and parsley.
- Bake in a 350°F oven for about 40 to 45 minutes, until chicken is cooked through.
Notes
- Storage: Store leftovers in an airtight container in the refrigerator for up to 4 to 5 days. Reheat in the microwave.
- Freezer Directions: Prepare recipe but do not bake. Cover and freeze for up to 3 months. Thaw in the refrigerator overnight. Bake as instructed, adding an additional 10 minutes to account for the cold dish.
