½teaspoonblack pepper
½teaspoonwhite pepper
½teaspoongarlic powder
2eggs
¼cupwater
1½cupscornflakes crumbs
½cupgrated Parmesan cheese
Olive oil(or cooking spray)
Instructions
Preheat oven to 400°F. Line a baking sheet with parchment paper. Set aside.
You'll need 3 separate bowls that are large enough for the chicken pieces. In the first bowl, add flour, salt, black pepper, white pepper, and garlic powder. Whisk to combine.
In the second bowl, add eggs and water. Whisk to combine.
In the third bowl, add cornflakes and Parmesan and stir to combine.
Dredge a piece of chicken in the flour mixture. Then dunk in egg mixture. Then coat in cornflake mixture. Place onto prepared baking sheet. Repeat for each piece of chicken.
Lightly brush or spray olive oil into prepared chicken. This will help it crisp up and turn golden.
Bake at 400°F for about 30 to 40 minutes, or until cooked through.
Notes
Storage: Store leftovers in the refrigerator for up to 5 days.
Reheat: For the crispiest leftovers, reheat the chicken in a 375°F oven until heated through and the coating is crisp again. You can also reheat individual pieces in the air fryer. Reheating in the microwave works in a pinch, but the coating will soften.
