COMBINE

1. In a medium saucepan over medium high heat, bring cream and sugar to a boil, stirring constantly until sugar dissolves.

STIR & BOIL

2. Reduce heat to medium, and continue boiling for 3 minutes, stirring constantly, adjusting heat as necessary to keep it from boiling over. Remove from heat.

STIR IN & REST

3. Stir in lemon zest and juice. Allow to sit 10 minutes to cool.
