Chilaquiles rojos (aka Red Chilaquiles) is a traditional Mexican dish with crispy tortilla chips simmered in a homemade rich and spicy red salsa, topped with fried eggs, crema, and all of your favorite fresh toppings. Bold, comforting, and full of flavor!

Easy to make, endlessly customizable, and full of comforting flavor, chilaquiles rojos are a must-try for any fan of Mexican food or brunch.

PREHEAT & PREP

1. Preheat oven to 350°F. Line a baking sheet with parchment paper.

PREP TORTILLAS

2. Place tortilla triangles in a single even layer on the prepared baking sheet. Brush lightly with olive oil. Sprinkle with salt. Turn each triangle over and repeat on the other side. (About 1 tablespoon olive oil per side)

BAKE

3. Bake for about 12 to 15 minutes, or until slightly brown and crispy. Set aside.
